Organic Artisan Small-Batch Brie – Tallgrass

Tallgrass is the name of North Sky Farm's Certified Organic Brie. This delicious cheese is a testament to our commitment to the environment and to delicious flavor. Crafted from organic cow's milk, this artisanal cheese embodies the essence of our sustainable on-farm creamery in Northern Illinois.

This cheese is a 2026 Illinois State Fair 1st Place Blue Ribbon winner!

The cheese features a luxurious, creamy texture and a mellow flavor profile that appeals to both seasoned cheese aficionados and casual snackers alike. About us? We are Mariah and Travis Hurt, farmers and cheesemakers making delicious cheese in our on-farm creamery and running our micro-dairy tending to cows on pasture year-round. I don't know exactly how we got where we are today but I think it probably has something to do with loving to stand around the kitchen at the end of a long day talking and cutting one more bite of cheese from the wheel until much to our surprise the whole thing is gone. I think it doesn't matter who you are, people have known forever that enjoying good cheese at the end of the day is the simple luxury that makes life worth it.

French Dairy Farmers' Breakfast
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
• 1 Wheel of Tallgrass Organic Brie
• Butter Croissant
• Cinnamon
• Sugar
• Hot Coffee

Slice Butter Croissant and build sandwich of thinly sliced Tallgrass cheese and top with sprinkle of cinnamon and sugar. Place in oven, toaster oven, or cast iron skillet to warm and get really melty and delicious. Enjoy with hot coffee or tea. Can’t beat this one!

Season’s End Salad with Walnuts, Cranberries, and Prosciutto
𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
• Wheel of Tallgrass Organic Brie
• Chopped Walnuts
• Dried Cranberries
• Prosciutto
• Baby Kale or Kale Mix
• Balsamic Dressing

Cut Tallgrass cheese and Prosciutto into thin slices or bites. On a bed of baby kale, add chopped walnuts, dried cranberries Tallgrass and Prosciutto. Drizzle with Balsamic Vinaigrette. Toss as needed. Yum!
